I previous posts I have talked about my daughter Lu’s life threatening egg allergy that is complicated by her subglottic stenosis (narrowing of her airway). She is also sensitive to milk and soy, which causes her stomach and skin irritation. So our house is egg free which is very hard for a little girl who loves treats and let’s face it, almost all delicious and yummy baked goods have egg in them.

Enjoy Life Foods just released several new products and sent me the Double Chocolate Crunch Granola and the Semi-Sweet Chocolate Mega Chunks for review.
My kids love to have fruit and yogurt for breakfast so I got the great idea to make fruit and yogurt parfaits with the Double Chocolate Crunch Granola. I took two glass cups and layered coconut yogurt, the granola, bananas, blueberries and strawberries.
The parfaits were delicious, the granola tastes fantastic. There are small chocolate morsels throughout the granola that give it that extra chocolate kick. I did catch my critters trying to pick out the morsels and eat them individually. I also tried the granola as a cereal with just some non-fat milk and it was delicious and crunchy. A perfect addition to your normal breakfast routine.
The second item that I was sent was the Semi-Sweet Chocolate Mega Chunks. I debated over what to bake with these delicious chocolate morsels and decided to make pancakes. I recently learned that I can use flax as an egg replacer and thought that Chocolate Chip Pancakes would be the perfect breakfast surprise.
Unfortunately I don’t have any photo’s of the pancakes. In the midst of eating, our speech therapist arrived (unexpectedly) and the picture taking just slipped my mind. However, the pancakes were delicious. The chocolate chunks melted nice smooth and the chocolate flavor in these Mega Chunks is really outstanding. They are even great right out of the bag – which has become one of my kids favorite treats to ask for. I highly recommend them.
